What You’ll Need:
For Muffins:
1 1/2 cups flour
3/4 cup sugar
1/2 tsp salt
2 tsp baking powder
1 tsp ground cinnamon
1/3 cup olive oil
1 egg
1/3 cup milk
1 1/2 cups pealed and chopped apples
For Topping:
1/2 cup sugar
1/3 cup flour
1/4 cup butter, cubed
1 1/2 tsp ground cinnamon
Instructions:
Preheat oven to 400 degrees F. Grease or line muffin pan.
To make the muffins:
Combine 1 1/2 cups flour, 3/4 cup sugar, salt, baking powder, and 1 tsp ground cinnamon.
Place the 1/3 cup of olive oil into a 1 cup measuring cup. Beat the egg and add it to the measuring 1 cup measuring cup with the oil. Then add enough milk to fill the cup. Mix this with the flour mixture.
Fold in apples. Fill muffin cups to the top.
To make the topping:
Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 tsp cinnamon. Mix with fork (or fingers) until crumbly. Sprinkle on top of muffins before baking.
Bake for about 20 minutes, or until toothpick comes out clean.
